Paleo Pancakes

Okay.. Today we are sharing a recipe for our Paleo Pancakes. These are super easy to make delicious! As many of you know, we have super strict guidelines for our Paleo meals. We never use nut flours (coconut or almond) or butters, honey, agave, or any other sweetener. These items are just way too high in fat and cause a substantial spike in calories which we don't like to see. Too often we see people substituting all of their baked goods and snacks with a "Paleo" version which consists of more fat and honey than anything else. It is important to keep your fat intake down around 30 - 40 percent of your daily dietary intake (unless you are at a fitness level to support the higher caloric intake - if you are trying to cut some weight or decrease your BMI this is not you), and using these ingredients makes it too easy to jump right back up around 50, 60, 70.. percent, which is completely unacceptable. You cannot replace your daily carb intake with fats. You need to eat a lot of vegetables and fruits to make up for those carbs you are missing. These pancakes are a perfect alternative, and keep your caloric and fat intake at an optimal level.

Ingredients:

2 eggs
3 bananas (still a little green)
1 tsp cinnamon

 

For The Topping:

1 Cup Fresh Blueberries
1 tsp Raw Honey

Directions: Peel the bananas and crack the eggs (obviously, right?). Pick out bananas that still have a good amount of the green left, if they don't have any on the shelf a lot of times they will have some in the back that. You are going to want the bananas to have a little snap when you break them in half. Place all ingredients into a blender or food processor and blend until you form a smooth batter. You want your batter to be just a little bit thicker than a traditional pancake batter. If it is too thick you can add more ripe banana to thin it out. Heat a griddle or skillet to about 325 degrees grease with just a little dab of coconut oil so they don't stick. Pour the batter on to the griddle, brown on both sides, and serve. We like to use a fresh berry puree to serve with our pancakes, but you can use diced berries or any other fruit you like.
