All right boys and girls.. Today we have our Coconut chicken for you. I have to tell you up front it is quite easy to make, which might just might make you very happy! If the easy angle on this recipe isn't enough to sway you into trying this out then maybe the taste will, because it is absolutely delicious. This is a great paleo meal that you can throw together when you are short on time and still want people to think you spent all day cooking.
Directions:
Preheat your oven to 425 °
First off you need to get you chicken breast into a bowl. Now mix all of your seasonings together. This includes the Cinnamon, ginger, ground cloves, nutmeg (those first four ingredients make a pumpkin pie spice if you didn't know except all equal parts) and coconut sugar. I mix my salt and pepper in at this point as well, but if you are not well versed in seasoning it is very easy to over salt and once it is baked in you cannot undo it. Once they are all evenly coated with your seasonings place coconut into a separate bowl to dip the chicken in. Dip each chicken breast in the coconut until it is well covered (the moisture from the chicken should be enough to make the coconut stick). Place the chicken breasts on a baking sheet and bake for 20 - 25 minutes. While your chicken breasts are in the oven cut your mandarin orange into slices (or you could just peel it and pull apart the segments). Once the chicken is cooked simply top it with the oranges and you are ready to eat. I also take an extra orange and squeeze the juice on top right after baking them. And that's it, I told you it was a fairly easy one.
