Paleo Style Alfredo Sauce

 

We are doing our version of Alfredo sauce today! I have seen many versions popping up online and they all contain things like butter and cream, which automatically make it not Paleo. It seems like people want to keep making exceptions in their diets for certain things. Just a little exception here and little one there. The truth is that the more exceptions we allow in the less effective our diet will be. Remember, a diet isn't just a weight loss plan a diet is a lifestyle. It is having the self control to avoid indulgences to achieve our goals. To run faster, jump higher, to make it one more rep, one more round, one more second. When the clock is counting down and we are exhausted a healthy diet gives you the ability to push harder. Stop making exceptions and look for real healthy alternatives, or just go without. It is not always easy but when you hit your new PR's it is always worth it. It just depends on how bad you want it, and what you are willing to give up for it.

Ingredients:


1/2 onion, peeled and chopped
1 medium sized head of cauliflower
3 cloves garlic, minced
1 tsp. coconut oil or EVOO
1 tbsp sea salt
white pepper to taste

Directions: First, remove the leaves from the head of cauliflower and cut around the underside to remove some of the core and cut the head into florets. Add the cauliflower and onion to a sauté pan and add 2 cups of water. Bring to a boil and cover. Allow to boil for 8 - 10 minutes until the cauliflower is very soft and most of the water has gone from the pan. Transfer the contents of the pan to food processor or blender. In the pan heat your oil over low heat and add the garlic. Cook over low heat for 1 to 2 minutes to let the flavors of the garlic come out - Do not brown. Add this to the food processor along with the salt and blend well until smooth. Add additional salt and pepper if needed and serve over chicken with spiraled zucchini noodles.
