Here is one of our newer side dishes which we have had great responses from. These carrots are a great Paleo side and are the perfect side dish for almost any entree. Not only do they taste fantastic, but carrots have an incredible amount of health benefits ranging from better eye health to high amounts of vitamin A. Combine that with the anti-inflammatory properties found in ginger and you have a powerful little health booster that tastes absolutely delicious!

Directions: To start with, do not peel your carrots. Do however, wash them well. Cut the carrots in half lengthwise and then chop them into bite size pieces - not too small. Toss the chopped carrots into a bowl and coat them with the coconut oil, then add the other ingredients. Toss them around until they are evenly coated with all of the seasonings. Place them on a baking sheet and place in a 450˚ preheated oven for about 25 minutes or until you the the edges start to darken. Once they are nicely browned they are ready to serve!
