Broiled Radishes

All right. I have had more requests for this recipe than any other, so we are posting it today! Here is how we make our roasted radishes. They are an awesome side and a great replacement for the potato (so hard to find things to take the potatoes place.) These broiled radishes look like litte roasted red potatoes and are packed with delicious flavor. They are sure to become a favorite Paleo side for you. They pair perfect with anything you would serve roasted potatoes with.

Ingredients:


1 bunch radishes, cleaned and trimmed
1 qt. water
1 Cup vinegar
1 Tbsp salt
1 clove minced garlic
1 tsp coconut oil, or EVOO
salt & pepper to taste

Directions: Take your bunch of radishes and remove the greens. Trim off both ends of the radish. In a pot bring to a rolling boil the qt of water. Add 1 cup of vinegar and 1 Tbsp of salt to the boiling water, then add the trimmed radishes. Boil for about 10 minutes until the radishes are softened, but still firm (about the firmness of a tomato). Remove the radishes from the water and discard the boiling liquid. Place the boiled radishes on a baking sheet and turn your broiler on to a medium or high setting. Rub the radishes with salt, pepper, garlic, and the coconut oil until well coated. Place them under the broiler for two to four minutes to get a nice roasted color on them, then serve with your favorite entree! This is a favorite of a lot of our clients, so enjoy!
