All right. People have been requesting that we post some recipes. We listened to you! This is our first recipe on this website, and we will be adding more and more as time allows. To start it off we are posting our Paleo Pulled Pork for all of you. Thank you to everyone who has gotten us to where we are today. This is for all of you.

Ingredients:
¼ of a whole boneless pork loin

Directions: To start, if you buy a whole pork loin cut it into fours. We use the pork loin because it is very lean, and works very well. With a knife, remove all of the visible fat from the top of the loin (optional). Mix all of your spices for the rub together and generously rub your meat down with the spice blend. Place in a crock pot and add the fresh orange juice If you are buying store bought juice make sure you check the label. You will want to check for two things. First look at the front of the bottle, and find one that says "NOT from concentrate". Then check the ingredients and make sure the only ingredient listed is "oranges", or "juice from oranges". Add the remaining spice mix and cover completely with water. Allow to cook in the crock pot for 6 hours, or until tender. Once you have the meat cooking, shred the cabbage using a mandolin or a sharp knife. Add the vinegar and the salt and put in the fridge until you are ready to serve. You can do all of this in the morning, go about your busy day, and have dinner ready for you whenever you are ready to eat. Once the meat is finished cooking, remove it from the water and discard the cooking liquid. Using your hands, or two forks pull the meat apart (should come apart very easily). Serve it over the cabbage slaw, and pour some if your Paleo Barbecue Sauce on top. I like to put some fresh chopped cilantro on mine for color and flavor. Serve with fresh veggies and a salad for a perfect Paleo Meal.
