Hello Everyone! Today we are excited to share with all of you how we make our Paleo Blueberry Muffins. These muffins are delicious and make a great addition to any breakfast. We use the bananas to bring the fat and calorie counts down a little from most of the other paleo recipes out there. This also adds in some essential vitamins which are always an excellent addition. If you didn't know, bananas are an excellent source of vitamin b6, vitamin c, potassium, manganese, and dietary fiber. The blueberries are also a great antioxidant. Together these make a delicious healthy addition to your breakfast that you will be happy to have.
Directions:
Preheat your oven to 350 degrees.
To start of, gather all of your ingredients together. This is what the French call "Mise En Place" - having everything out and available makes working on any recipe so much easier and quicker. So, once you have everything out and available grab a blender out of your pantry (or whichever place you happen to be storing it), a muffin tin, and paper liners. In the blender add the five eggs (no shells), three bananas -medium ripeness, peeled-, ½ raw honey, ½ cup melted coconut oil, ¼ teaspoon sea salt, one teaspoon of cinnamon. Or to put it simpler, everything but the blueberries. Blend everything together until you have yourself a smooth batter. Then, pour the batter into the muffin tins that you previously lined with paper liners (we usually get 12 - 16 muffins from this recipe). Add the blueberries into the batter; push them down a little bit so they are covered. Bake for 15 - 20 minutes and you are finished.
